This morning I had a pancake breakfast date with my favourite little mate. I’m trying to make the most of our time together before his little brother arrives in December. I don’t like our chances of too many leisurely cooked breakfasts during that newborn stage!
These pancakes were so simple, and he enjoyed helping me to make them. He’s three years old, and he’s learning to crack the eggs, but the mixing part is his favourite step. These measurements are very approximate, just add or subtract until it looks like a thick pancake batter. You really can’t mess it up. In saying that, some days mine turn out better than others. The key is to experiment with the ingredients, and have some fun while doing so. Enjoy! Do you have a favourite pancake recipe? How do you make them for food allergies or intolerances? 2 mashed bananas
2 Tbsp wholemeal spelt flour
1/2 tsp baking powder
1 tsp vanilla extract
Mix and pan fry in coconut oil or butter until golden on both sides. Top with your favourites, we had berries, maple syrup, coconut, seeds, and a little natural yoghurt.
And um incredibly…we ate them all! 😂
